Preheat the grill to medium. Add the broccoli (1 head) to a foil-lined baking tray and toss with 1 tbsp of olive oil and a pinch of salt. Grill the broccoli for 7-10 minutes, until golden brown.

Meanwhile, heat a medium saucepan over medium heat along with a glug of olive oil, followed by flaked almonds (50 g). Cook for 3-4 minutes, until golden brown and then remove from the heat and pour onto a kitchen towel.

Dissolve the stock pot (1/2) in the boiling water (200 ml), then heat a small saucepan over medium-high heat and pour in the stock. Bring to the boil and reduce by half, then whisk in the cold butter (30 g) gradually until you have a thick buttery sauce. Keep whisking as you squeeze in the lemon juice (1/2).

Serve the grilled broccoli on a large plate or platter and pour over the lemon butter. Scatter with the fried almonds, sliced red chilli (1) and lemon zest.
