Preheat the oven to 200°C/180°C fan/gas mark 6.

Add the vinegar (2 tbsp) and sugar (1 tbsp) to a mixing bowl with a pinch of salt. Mix well and then add the cucumber (1/4) and radishes (3) and leave to sit.

Remove the sauce sachet from the pulled mushrooms tray (1 pack) and place the foil tray directly into the centre of the oven. Cook for 35 minutes, stirring halfway.

Add the sauce sachet to hot water for 5 minutes to soften, then remove the foil tray from the oven and add the sauce. Cook for a further 5 minutes, until sticky.

Meanwhile, mix the sriracha (1 tbsp) and mayo (2 tbsp) in a small mixing bowl. Season to taste with salt and pepper.

Cook the bao buns (4) in the microwave for 2 minutes, according to the packaging instructions.

Carefully pull apart the buns and fill them with a layer of sriracha mayo, and top with the pulled mushroom mix. Load in the quick-pickled veg and top with the sesame seeds (2 tsp) and coriander (as needed).
