Preheat the oven to 200°C/180°C fan/gas mark 6.

Add the garlic paste (1 tbsp), 2 tbsp of the nuoc cham (2 tbsp), turmeric (1 tbsp), curry powder (1 tsp), honey (1 tsp), lime juice (1/2) and vegetable oil (2 tsp) to a mixing bowl. Stir in the cornflour (1 tbsp). Season with salt and pepper, then add the cod fillets (4) and mix until fully coated.

Cut out 4 large squares of aluminium foil (30cm). Divide the rice (2 pouches) across the four squares and top with the roughly chopped vegetables (225 g). Dress with the remaining 2 tbsp nuoc cham dressing (2 tbsp).

Spoon the cod fillets on top of the rice and vegetables, and top with the dill (4 sprigs), spring onions (3) and red chilli (1), reserving some of each to serve. Fold the edges of the aluminium foil over itself to seal the cod and pop onto a large baking tray.

Pop into the oven for 25-30 minutes, until the cod is cooked through.
