Pre-heat the grill to high. Add the sausages (1 pack), peppers (2) and onions (1) to a foil-lined baking tray. Pop under the grill for 10 minutes, then remove the veggies and turn the sausages. Grill for a further 10 minutes.

Meanwhile, heat a large saucepan filled with lightly salted hot water and bring to a boil. Once boiling, add the penne (380 g) and cook for 9-11 minutes, until al dente. Reserve 1 cup of pasta water and then drain.

Slice the cooked sausages into diagonal slices. Place the saucepan used for the pasta back on the stove over a medium heat and add the sausages and cooked vegetables. Pour in the roasted red pepper dip (1 jar), smokehouse seasoning (1 tbsp) and drained beans (1 tin). Add a splash of pasta water and simmer together until hot.

Stir the mascarpone (3 tbsp) through the sauce and cooked pasta and simmer for 1 minute, until you have a glossy sauce. Season to taste with salt and pepper and stir through the chopped parsley (15 g), reserving some to garnish.
