Bring a small saucepan of water to the boil then turn the heat down to a simmer. Boil the quail egg (12) for 2 minutes, then plunge into cold water. Carefully peel and halve.

Slice the salmon (50 g) into small pieces.

Combine the crème fraiche (100 g) with the lemon zest (1) and chives (5 g), reserving a small handful to garnish. Add a squeeze of the lemon juice.

Top the bruschettine (24) with the lemony crème fraiche, a little smoked salmon and half a quail egg. Finish with some more fresh chives.
