Preheat the oven to 200°C/180°C fan/gas mark 6. Add the broccoli (2 heads), carrots (2) and peppers (2) to a large oven tray and toss with 1 tsp olive oil and a pinch of salt. Roast for 10 minutes.

Meanwhile, add the soy sauce (3 tbsp), sesame oil (1 tbsp), honey (1 tbsp), garlic (2 cloves), ginger (2 tsp) and orange juice (1) to a small mixing bowl and whisk together. Whisk in the cornflour (1 tbsp) until combined.

Pour the stir-fry sauce over the veggies and pop back into the oven for 15 minutes, until the veg is soft and the sauce is sticky.

Meanwhile, add the rice (250 g) to a saucepan and cover with boiling water. Cook for 15-18 minutes, until tender, and then drain.

Meanwhile, add the cashews (75 g), sesame seeds (2 tbsp), remaining soy sauce (2 tsp), sesame oil (2 tsp) and honey (2 tsp) to a mixing bowl and mix until sticky. Add to a greaseproof-lined baking tray and roast for 5 minutes, until golden brown. Leave to cool completely and then roughly chop.

Serve the sticky veggies with the rice and top with the thinly sliced spring onions (2) and crunchy cashew mix.
