Bring a large pan of generously salted hot water to a boil and cook the pasta (400 g) for 10 minutes, or until al dente.

Meanwhile, bring a separate pan of salted water to the boil and cook the chef's green medley (1 pack) for 5-7 minutes, until tender. Add the frozen peas (75 g) for the final two minutes of cooking time. Drain.

Blitz the cottage cheese (175 g) in a food processor until light and fluffy. Add the drained greens and peas, the juice and zest of the lemon (1), and the grated Italian hard cheese (50 g) and blitz again to form a super smooth, creamy sauce.

Drain the pasta, reserving a cupful of the pasta cooking water. Toss the cooked pasta in the green sauce, adding a splash of cooking water as needed to create a silky sauce.

Serve with a little extra grated hard cheese, if you like.
