You will need 18 cocktail sticks, 1 per date.

step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Line a baking tray with greaseproof paper.
step 2
Cut a slit at the top of each date (18), being careful not to cut all the way through. Slice the brie (70 g) into 18 thin strips and slice each bacon rasher (9 rashers) in half.
step 3
Add the dates to the prepared tray, leaving enough space between each one. Stuff each date with a piece of brie and wrap with a halved rasher of bacon. Pierce each date with a cocktail stick to keep the bacon secure.
step 4
Add the dates to the oven and cook for 7 minutes.
step 5
Meanwhile, mix the chutney (55 g), honey (1/2 tbsp), 1 tbsp of oil and chopped rosemary leaves (1 sprig) together and add a tbsp of water to loosen the consistency.
step 6
Remove the dates from the oven and brush most of the chutney mixture over the dates and season with some black pepper. Return the dates to the oven for a further 5 minutes.
step 7
After 5 minutes, take the dates out and flip each one and glaze them again with the remaining chutney mixture. Return to the oven for a further 10 minutes until the bacon is crispy.
step 8
Remove from the oven and sprinkle with a pinch of flaky sea salt and serve straight away.
