Preheat the oven to 220°C/200°C fan/gas mark 7. Trim the parsnips (1 kg) at both ends, leaving their skins on. Cut them into quarters lengthwise down the middle, so you end up with long batons.

Place the parsnips in a pan of salted water and bring to the boil. Turn the heat down to medium, then par-boil for 4 minutes, or until just tender. Drain and allow to steam dry.

Arrange on a baking tray and drizzle with olive oil. Sprinkle over the roots for roasting seasoning (1 tbsp).

Roast for 25 minutes, until golden.

Remove from the oven, turn over and press down with a potato masher to flatten. Return to the oven for a further 15 minutes.

Remove from the oven, drizzle with the hot maple syrup (1 tbsp) and return to the oven for a further 5 minutes until gorgeously sticky, golden and crispy.
