Preheat your oven to 200°C/180°C fan/gas mark 6. Add the pigs in blankets (1 pack) to a roasting dish and cook for 25 minutes, until golden brown.

Bring a large saucepan filled with hot water to a boil. Add the spaghetti (400 g) and simmer for 10 minutes, until al dente. Drain, reserving 1 cup of pasta water.

Add the egg yolks (4) (save the egg whites for another recipe) to a bowl with the grated parmesan (50 g) and pecorino (50 g) and mix well with a pinch of salt and pepper.

When the pasta has 2 minutes remaining, heat a large frying pan with 1 tbsp of olive oil over a medium heat. Add the lightly crushed garlic cloves (2 cloves) and cook for 2 minutes, until fragrant.

Cut the pigs in blankets in half and add to the garlic with the cooked spaghetti and 2 tbsp of pasta cooking water and toss together for 1 minute.

Remove from the heat and stir in the egg yolk mixture, stirring continuously, until you have a glossy sauce. Add a splash of pasta cooking water if necessary to loosen.

Serve in bowls topped with more Parmesan, if you’d like.
