Preheat your oven to 180°C/160°C fan/gas mark 4. Pop the chopped dates (150 g) into a blender and pour over 100ml of mulled wine (100 ml). Blend until you have a paste.

Whisk the butter (80 g) and sugar (100 g) together until light and creamy, then whisk in the eggs (2), treacle (2 tbsp) and the blended date mixture. Fold in the flour (195 g), mixed spice (1 tsp), ground ginger (1 tsp) and baking powder (1 tsp) until well-combined.

Pour into a 25cm lined baking dish and bake for 30 minutes, or until an inserted skewer comes out clean.

Meanwhile, make the mulled wine sauce. Add the 100ml mulled wine (100 ml), sugar (100 g), golden syrup (50 g) and butter (90 g) to a small saucepan over a medium heat and simmer for 5-7 minutes, until thick and glossy. Turn off the heat, then whisk in the cream (130 ml) until combined.

Remove from the oven and poke holes into the top of the cake using a skewer, then pour over the warm mulled wine toffee sauce. Serve with more double cream, if you’d like.
