Preheat the oven to 200°C/180°C fan/gas mark 6. Add the drained sweetcorn (1 tin), butter (15 g), chorizo (75 g), oregano (1 tsp) and paprika (1 tsp) to a 20cm x 30cm non-stick, baking tray. Place into the oven and cook for 15 minutes, until golden brown.

Meanwhile, whisk the eggs (10) together in a large jug with the cottage cheese (2 tbsp).

Pour the egg mixture over the golden chorizo and stir in the cheddar (100 g). Mix together and season with salt and pepper. Pop back into the oven and bake for 10 minutes, until the eggs are set.

Cut into 6 pieces, then serve with salad leaves (1 bag).
