Preheat the oven to 180°C/160°C fan/gas mark 4.

Add the mixed berries (1 pack) to a large mixing bowl. Toss with the sugar (180 g), cornflour (1 tsp), elderflower cordial (2 tbsp), lemon zest and juice (1), then leave to one side.

Meanwhile, add the cake mix (1 box) to a large mixing bowl and add in the eggs (3), milk (100 ml) and softened butter (100 g) and mix until well combined.

Add the berries and sugar mixture to a 25cm rectangular baking dish and top with 100ml of boiling water. Pour over the cake batter and bake for 30-35 minutes, until golden and an inserted skewer comes out clean.
