To make the ice cream, place the condensed milk (200 ml), cream (600 ml) and vanilla extract (1 tsp) into a large bowl then whisk until thick and stiff. Stir in the honeycomb pieces (75 g) and transfer to a container or loaf tin covered with cling film and freeze for 2-3 hours, until solid.

When the ice cream is ready, preheat the oven to 200°C/180°C fan/gas mark 6.

Place the figs (8) in an ovenproof dish. Drizzle over the honey (2 tbsp) and splash over the Madeira (2 tbsp), then bake for 10-15 minutes, until soft.

Serve the figs with the ice cream and some of the juices from the pan.
