Beat the eggs (4) in a large bowl with a pinch of salt and pepper.

Heat 10g butter (10 g) with a splash of oil in a large non-stick frying pan over a medium heat. Dip two slices of bread (2 slices) into the egg mix and place in the pan. Top each slice with a quarter of the grated cheddar (15 g), a slice of ham (1 slice) and one of the sliced tomatoes (1).

Dip another two pieces of bread (2 slices) into the egg mix and place on top of the bread in the pan. Cook for 2-3 minutes, before carefully flipping and then cooking for a further 2-3 minutes until the cheese has melted and the bread is golden.

Repeat with the remaining butter (10 g), bread (4 slices), egg mix, cheddar (45 g), ham (3 slices) and tomatoes (3).

Serve with a dollop of smokehouse ketchup (to taste) on the side.
