Steep the cold brew coffee (1) in 125ml water.

Add the mascarpone (250 g) and 50ml cream (200 ml) into a bowl and whisk until smooth. Add the remaining cream, whisking until soft peaks form. Sift in the icing sugar (4 tbsp) then gently fold in.

Combine the cold brew and amaretto (6 tbsp) in a separate bowl. Break 7 sponge fingers (7) in half and dip in the amaretto and espresso mixture. Place into the base of four tumblers to form a layer.

Spoon over half of the cream mixture, then crumble over one of the classic amaretti biscuits (12), followed by half the grated chocolate (25 g).

Repeat the process with the remaining sponge fingers (7), espresso and amaretto mixture, and cream.

Chill in the fridge for 2-3 hours, and when you’re ready to serve, allow to come to room temperature before grating over the remaining chocolate (25 g).

Serve each tiramisu pot with two more amaretti biscuits on the side.
