Preheat the oven to 180°C/160°C fan/gas mark 4. Add the grated courgette (1) to a clean tea towel and squeeze out as much liquid as possible.

Add the courgette to a mixing bowl with the halloumi (150 g), Greek seasoning (1 tbsp), egg (1), olive oil (50 ml), olives (1 pack), milk (150 ml), flour (200 g) and ½ tsp salt. Mix well until you have a thick batter.

Line a muffin tray with 6 large compartments with greaseproof paper or muffin cases. Equally divide the batter between them and sprinkle with the sesame seeds (1 tbsp). Bake for 20-25 minutes, until the tops are golden and a skewer comes out clean.
