Add 200g of strawberries (200 g) to a saucepan with 2 tbsp of water and the icing sugar (1 tbsp). Simmer until the strawberries can be mashed with the back of a fork. Remove from the heat and add the orange brandy (80 ml).

Meanwhile, make the cream: whip the cream (300 ml) and caster sugar (50 g) in a clean mixing bowl until soft peaks form. Fold in the mascarpone (250 g) and vanilla (1 tsp), then continue to whip until smooth – be careful not to overdo it.

To assemble, thinly slice the remaining strawberries (200 g). Dunk the biscuits (1 pack) into the strawberry and orange liqueur mix and pop into the tray. Spread over half the cream. Repeat once more, then top with the sliced strawberries. Dust over more icing sugar, if you’d like.
