Preheat the oven to 220°C/200°C fan/gas mark 6. Remove the dough (1 pack) from the packaging, cut in half, and shape each half into a ball. Set aside to rest for 15 minutes.

Meanwhile, to make the tomato sauce, heat a splash of olive oil in a frying pan over a medium heat and add the garlic (3 cloves). Cook for 1 minute or until fragrant, then stir in the tinned tomatoes (1 tin), sugar (1 tsp), red wine vinegar (1 tsp) and ½ tsp salt. Simmer for 10 minutes then allow to cool.

Cut the skins from the sausages (4) and roll them into balls, about the size of a two-pence coin. Pan-fry over a medium heat, squishing them down slightly, and cook for 7-10 minutes, turning, until golden brown all over.

Blanch the broccoli (1/2 head) in a pan of salted boiling water for 2-3 minutes then thoroughly drain.

When you’re ready to assemble, take one ball of dough and place on a piece of baking paper cut the same size as your baking tray (roughly 20 x 30cm). Lightly dust the dough with flour (as needed), then press with your fingers and stretch to form a 20 x 30cm rough rectangle. Repeat with the other ball.

Place the dough rectangles with the baking paper underneath onto two baking trays and top with the tomato sauce, blanched broccoli and sausage. Tear over the mozzarella (1) and blob with the cottage cheese (2 tbsp).

Bake for 9-12 minutes, or until the pizzas are golden brown and the cheese has melted.
