This banana and blueberry loaf is a simple and nutty delight. The Banana Maple Peanut Butter swirls through the bread, adding a rich and slightly sweet depth. Blueberries pop with juiciness and the Collection Caramelised Fruit and Nut Granola is folded in and sprinkled on top, giving the loaf a satisfying crunch in every bite.

step 1
Grease and line a 2lb loaf tin with parchment paper. Preheat the oven to 180°C/160°C fan/gas mark 4.
step 2
Cream the softened butter (140 g) with the caster sugar (70 g) and light brown sugar (70 g), using a hand-held mixer or stand mixer, until light and fluffy. Then slowly add the beaten eggs (2) with some of the flour (140 g) to avoid the mixture splitting. Mix in the mashed bananas (2) and vanilla (1/2 tsp) and then fold in the remaining flour and baking powder (1 tsp).
step 3
Gently fold through the blueberries (100 g) and granola (50 g).
step 4
Add the cake mix to the prepared tin and swirl through the peanut butter (2 tbsp). Finish with a sprinkling of soft light brown sugar (1 tbsp) and the granola (1 tbsp), then bake in the oven for about 50 minutes, or until cooked through.
