Scrunch the mint leaves (1 handful) to release their aromas and place into the bottom of two large wine glasses. Pour over the elderflower cordial (40 ml) and gin (40 ml) equally between the two glasses and set aside to infuse for 2 minutes.

Fill the glasses with ice (1 handful) then top up with prosecco (240 ml) and soda water (50 ml). Garnish with a lime wedge (1) and extra mint leaves.
