Preheat the oven to 220°C/200°C fan/gas mark 7. Add the jersey royal roasties (600 g) and the whole garlic bulb (1 bulb) to a large, lined baking tray and cook for 25 minutes.

Meanwhile, mix the harissa (4 tbsp) and honey (1 tbsp) together and spread on top of the salmon fillets (4) . Season with a pinch of salt and pepper.

Add the salmon to the lined baking tray, pushing the potatoes to one side. Cook for 15 minutes, until the salmon is cooked through.

Meanwhile, add the cucumber (1), peppers (2), lemon juice (1) and olive oil (2 tbsp) to a mixing bowl. Season with salt and pepper and leave to marinade.

Remove the garlic from the oven whilst you wait for salmon to finish cooking and gently squeeze out the garlic and smush into a paste on a chopping board with the back of a knife. Add to a mixing bowl with the yogurt (6 tbsp), lemon zest and juice (1) and the olive oil (2 tbsp). Mix well and season to taste with plenty of salt and pepper.

Once the roasties are cooked, toss in the parsley (25 g) and za'atar (1 tbsp).

Serve the elements all together in bowls, or on separate serving platters for people to help themselves.
