Preheat the oven to 220°C/200°C fan/gas mark 7. Heat a large saucepan filled with water and bring to a boil. Add the sliced potatoes (150 g) and boil for 3 minutes, until soft. Drain and leave to one side.

Reheat the saucepan on medium heat and add the bacon lardons (75 g). Cook the bacon for 5 minutes and then add the thinly sliced onion (1) and cook for a further 10 minutes, stirring regularly, until soft and golden. Season lightly with salt.

Spread the crème fraîche (100 ml) on top of the pizza (1) and top with the soft potatoes, onion and bacon lardons followed by the grated gruyère (100 g). Place onto a wire rack and cook in the middle of the oven for 12 minutes.

Remove from the oven and slice. Sprinkle over the Oak smoked Anglesey sea salt (1 pinch), to taste.
