step 1
Soak the turtle beans (200 g) in cold water overnight, then drain.
step 2
Cut each onion (2) into 8 wedges.
step 3
Add the beans, peppers (1 pack), red onions, tinned sweetcorn (1 tin), chilli sauce (1 jar), chipotle paste (1 tbsp), chicken legs (2 packs), bone broth pucks (2 pieces) and the BBQ seasoning (1 tbsp) to a large slow cooker. Cook on high for 2 hours.
step 4
Remove the chicken and shred with two forks, then return to the slow cooker. Cook for 30 minutes to 1 hour, or until the beans are soft. Season to taste with salt and pepper.
step 5
Preheat the oven to 200°C/180°C fan/gas mark 6. Add the fries (500 g) to a large, baking paper-lined baking tray and cook for 19 minutes, or until golden. Season with salt and pepper.
step 6
Serve the fries on a large baking platter and top with half the cheddar (80 g), followed by half the pulled chicken chilli (save the rest for another recipe), the remaining grated cheddar, the sour cream (2 tbsp), jalapeños (1 tbsp), pickled red onions (2 tbsp) and coriander (15 g).
