Whip up this speedy purple sweet potato recipe for a healthy dinner that comes together in just under an hour, but that doesn’t mean compromising on big flavours. We’ve used purple sweet potatoes, which are available in selected M&S stores when in season. But if you can’t get hold of them, regular sweet potatoes would be equally good.
