Preheat the oven to 220°C/200°C fan/gas mark 7. Add the cod bites (300 g) to a baking tray and cook for 18 minutes, according to pack instructions.

Meanwhile, add the diced orange (1), shallot (1), coriander (1 handful), jalapeño (1) and lime juice (1/2) to a small mixing bowl. Squeeze in any remaining orange juice from the peel. Season with a pinch of salt and pepper to taste.

Add the chipotle paste (2 tsp), lime juice and zest (1/2) and mayonnaise (2 tbsp) to a small bowl and mix well.

Heat the tacos (4) according to pack instructions, then fill with the chipotle mayo, shredded lettuce (1), cod bites and top with the orange salsa and avocado (1).
