Add the lentils (300 g), onions (1), tomatoes (200 g), 2tsp ginger (2 tsp), ground cumin (2 tsp), turmeric (2 tsp), garam masala (2 tsp), half of the garlic (2 cloves), 1 of the green chillies (1) and stock (700 ml) to a slow cooker and cook on 4 hours, until the lentils are tender.

When you’re ready to serve, heat a splash of oil in a small saucepan. Add the cumin (1 tsp) and mustard seeds (1 tsp), the reserved garlic (2 cloves), chilli (1) and ginger (1 tsp) and cook for 2-3 minutes, until fragrant, before pouring into the dal.

Serve with the pickled onions (as needed), roti (as needed) and dips (1 pack).
