Heat 1 tbsp olive oil in a large saucepan on a medium heat, then add the carrots (2), onion (1), celery (2) and a pinch of salt. Sweat for 10 minutes, or until softened.

Meanwhile, cook the macaroni (100 g) in a large pan of salted water for 9 minutes, or until just cooked, with a bit of bite. Drain and leave to one side.

To the veg, add the chilli flakes (1/2 tsp) and oregano (1 tsp), followed by the beans (430 g), tomato soup (400 g), stock pot (1) and 100ml of water. Simmer for 5 minutes, or until thickened slightly. Season to taste with salt and pepper.

Just before serving, stir through the macaroni. Serve in bowls, topped with a drizzle of olive oil, and an extra pinch of oregano and chilli flakes, if you like.
