Blitz the beetroot (1 pack) and horseradish (1 tsp) in a food processor with a drizzle of olive oil and a squeeze of lemon juice (1) until smooth, season to taste with salt and pepper.

Toast the bread (4 slices) and spread with the beetroot dip. Top with the sardines (1 tin) with a little of their oil, the pea shoots (1 handful) and a sprinkle of seeds (2 tsp). Serve with a lemon wedge.
