Preheat the oven to 200°C/ 180°C Fan/gas mark 6. Add the pasta (320 g) to a large saucepan of boiling water for 10 minutes, until almost cooked. Drain and return to the pan.

Meanwhile, add the onions (2), peppers (3), chicken (350 g), fajita seasoning (2 tbsp) and 1 tbsp olive oil to a large baking dish and toss well. Bake for 15 minutes, until the vegetables are golden.

Add the salsa (200 g), hot and smoky marinade (3 tbsp) and the cooked pasta to the baking dish. Mix well, season with salt and pepper, then scatter over the grated cheddar (80 g).

Turn the oven to a high grill. Place the baking dish under the grill for another 10 minutes, or until the cheese is bubbling and golden and the chicken is cooked through. You can check this by cutting a large piece in half, ensuring the juices run clear.

Scatter over the coriander (as needed) and jalapeños (as needed), then serve.
