Heat a large ovenproof non-stick frying pan on a medium-high heat. Add the garlic and herb butter (2 knobs) and allow to melt completely, before adding the broccoli (1). Season with a pinch of salt, then cook for 3 minutes, or until softened.

In a large bowl, mix the eggs (6) and grated cheddar (100 g), and season with salt and black pepper.

Heat the grill to high. Pour the egg and cheese mixture into the frying pan. Mix once, reduce the heat to low and cook for 8-10 minutes, or until almost set. Add the pan to the grill for a further 4-5 minutes, until golden on top.

Meanwhile, combine the peas (200 g), pesto (2 1/2 tbsp), red chilli (1) (to taste), lemon juice (1) (to taste) and lemon zest in a mixing bowl, then season to taste.

Serve the frittata topped with the pesto peas.
