Heat 1 tbsp olive oil in a shallow, wide-lidded casserole dish. Add the red onion (1) and pepper (1) along with a good pinch of salt. Cook for 5 to 7 minutes, until softened and then add the harissa (2 tbsp), baked beans (1 tin) and water (150 ml). Allow to simmer for 10 minutes.

Make four little wells in the beans and crack the eggs (4) into each. Cover with a lid and cook for 10 minutes over a low heat, until the eggs are cooked to your liking.

Remove from the heat and top with parsley (1 handful) and pickled red onions (as needed). Serve with yogurt (as needed) and toasted pitta (as needed).
