Preheat the oven to 150°C/130°C fan/ gas mark 2. Mix the vegetable oil (2 tbsp), maple syrup (125 ml), orange zest (1), cinnamon (1 tsp) and vanilla (1 tsp) in a large bowl with a generous pinch of sea salt.

Toss with the porridge oats (300 g), mixed seeds (50 g), hazelnuts (50 g) and almonds (50 g) then spoon onto a large flat baking sheet. Bake for 15 minutes, then stir in the raisins (75 g) and crystalised ginger (40 g) and return to the oven for a further 10-15 minutes, until toasted and golden.

Store in an airtight container for up to a month – this is lovely with Greek yogurt and fruit for breakfast or simply with a splash of milk.
