Whisk the cream (600 ml), condensed milk (1 tin) and vanilla paste (1 tsp) until it forms soft peaks and has the texture of clotted cream. Fold through the Christmas cake (150 g) and transfer to a large freezable container. Freeze for at least 6 hours.

Scoop the ice cream into bowls and top with extra Christmas cake and a glug of amaretto liqueur (to taste) if you like.
