To make the slaw, combine the mayonnaise (1 tbsp), chipotle paste (1 tsp), lime juice (1) and season with salt and pepper. Toss through the red pepper (1), cabbage (1/2), carrot (1), sweetcorn (195 g) and coriander (1 bunch).

Spread two of the wraps (4) with the refried beans (1 tin) and cheese (100 g) on one side, and two with the chipotle marinade (2 tbsp). Sandwich together.

Preheat a large non-stick frying pan to medium. Cook the wraps for 3-4 minutes on each side, until golden brown and the cheese has melted inside (keep one warm in tin foil while you cook the other). Cut into quarters.

Serve the slaw with the quesadillas.
