Add the sugar (2 tbsp) to a pan with 2 tbsp water and cook over a medium heat until dissolved and syrupy. Allow to cool.

Add the sugar syrup to a cocktail shaker along with the marmalade (2 tsp), gin (100 ml), ice (1 handful) and bitters (4 drops). Shake then strain into a coupe. Top up with soda (as needed) and garnish with a twist of orange peel (as needed).
