Dice the tomatoes (800 g), peel, halve and finely chop the onion (1) and finely chop the garlic (3 cloves).

Add to a pan with the butter (1 knob), sugar (1 tsp), sherry vinegar (1 tsp) and a handful of basil leaves (1 bunch). Season with salt and pepper. Bring up to a simmer, turn the heat down and cook, stirring now and again, for 15 minutes. Taste, adjusting the vinegar, salt and sugar as required.

Meanwhile, cook the pasta (300 g) in generously salted boiling water until al dente.

Use a spider spoon to toss the cooked pasta into the tomato sauce, tossing until glossy. Serve with fresh basil leaves, the bocconcini burrata (1 pack) and parmesan (to taste) on top.
