Preheat the oven to 200°C/180°C fan/gas mark 6. Add the tomatoes (400 g), semi-dried tomatoes (2 tbsp), courgettes (2) and red onions (2) to a large roasting tin. Drizzle generously with the oil from the sundried tomatoes.

Bake for 25 minutes, until the onions have softened, and the tomatoes have blistered.

Stir in the drained cannellini beans (2 tins). Tear over the focaccia (1) and drizzle with a little olive oil.

Bake for a further 10-15 minutes, until the bread is golden and crisp on top. Serve with the basil leaves (1 handful) scattered on top.
