Cook the pasta (320 g) in salted boiling water according to packet instructions until al dente. Once cooked, rinse with cold water and set aside.

Meanwhile, use a peeler to create thin, long strips of courgette (2). Heat the butter (1 knob) in a large frying pan and cook the courgette strips until softened. Add half the lemon zest (1/2) and allow to cool.

To make the dressing, mix the lemon oil (2 tbsp), white wine vinegar (1/2 tbsp) and sugar (1 tsp) in a small bowl. Add the capers (3 tbsp), mint (1 handful) and basil (1 handful). Season to taste.

Stir the courgette into the pasta, followed by the dressing and feta (150 g). Add to a serving platter, top with the remaining lemon zest (1/2) and serve.
