Boil the eggs (6) in a pan of boiling water for 10 minutes. Remove and run under cold water to cool. Peel and place the eggs on a clean chopping board along with the lettuce (1/4), celery (1) and pepper (1/2).

Use a sharp knife to roughly chop all of the ingredients together – you want everything to be similar in size.

Mix the mayo (6 tbsp) and curry powder (2 tsp) together and add 4 tbsp to the egg mixture. Stir to combine and season to taste.

Split the baguette (1) down the middle and then into two halves. Spread each mini baguette with the remaining mayo before stuffing with the egg mix to serve.
