Blitz the mascarpone (250 g) and feta (200 g) in a food processor with 2 tbsp olive oil until smooth and creamy.

Preheat the grill to high. Cut the bread (1 loaf) into slices and drizzle with a little olive oil. Grill on a flat baking sheet for two minutes on each side, or until golden brown.

Meanwhile, slice the tomatoes (4) then cut each slice in half, to form half-moon shapes. Sprinkle with sea salt and set aside.

Spread the whipped feta on the toast, then sprinkle with the sumac (1 tsp). Arrange the tomatoes on top and nestle a basil leaf (1 handful) in between each.

Drizzle with the garlic oil (1 tbsp) and serve straight away.
