Place the mushrooms (1 handful) in a small bowl. Pour over boiling water and set aside.

Meanwhile, add a splash of oil to a large casserole dish. Add the cumin seeds (1 tsp) and cook for one to two minutes, until fragrant. Add the onion (1) and pepper (1) along with a sprinkling of salt and sauté for five minutes, until soft. Stir in the garlic (4 cloves) and cook for a further two minutes, until fragrant.

Stir in the chipotle paste (2 tbsp), hot honey marinade (1 tbsp), kidney beans (1 tin) and borlotti beans (1 tin) along with their liquid from both tins. Add the red lentils (150 g), bay leaves (2) and chopped tomatoes (1 tin), filling the empty tomato tin with water and adding this too. Stir in the flavour pot (1).

Remove the mushrooms from their soaking liquid, reserving the liquid, and finely chop. Stir the mushrooms into the chilli along with the mushroom soaking liquid. Season with salt and pepper.

Bring the chilli to the boil then turn down to a simmer and cook for around 45 minutes, until the lentils are tender, adding a splash more water as needed.

Meanwhile, preheat the oven to 200°C/180°C fan/gas mark 6. Pierce the sweet potatoes (4) all over with a knife, place directly onto the oven rack and bake for 45 minutes, until cooked through.

Slice the avocado (2) and dress in the juice of one lime (1). Serve the chilli in the baked sweet potato jackets with avocado and pickled onions (1 tbsp) on top, plus extra lime wedges (1).
