Preheat the oven to 200°C/180°C fan/gas mark 6. Heat a splash of olive oil in a large, shallow oven-proof casserole and add the soffritto mix (200 g).

Sauté for 5 minutes, until soft, then stir in the everything sauce (1 jar). Simmer for 5 minutes. Stir in half of the milky water from the mozzarella (1) pack.

Stir the ravioli (2 packs) into the sauce. Tear over the mozzarella then scatter over the grated parmesan (2 tbsp). Grind over some black pepper and drizzle over a little olive oil.

Bake for 15-20 minutes, until the mozzarella is golden and bubbling. Scatter over the basil (1 handful) to serve.
