To make the dough in a food processor, pulse the butter (70 g), flour (100 g) and cheese (70 g) until they resemble breadcrumbs. To make by hand, rub together the butter and flour until you have breadcrumbs, then add the cheese and mix with a knife.

Coax the crumbly dough into a ball. Cover it and leave it in the fridge for an hour.

Heat the oven to 180°C/160°C Fan/gas mark 4 and line two baking trays.

Roll the dough to about ½ cm thickness and use cutters to form biscuits. Small stars or hearts are amenable to little fingers, or, for even easier holding, cut 6cm strips with a knife.

Transfer the cut biscuits to your prepared trays and brush them with egg (1) or milk.
