Heat the sugar (6 tsp) with 25ml water until the sugar has dissolved and the mixture has thickened.

Add the gin (50 ml), lemon juice (25 ml) and sugar syrup to a shaker and shake well with ice.

Strain into a champagne flute. Top with the English sparkling wine (1 splash) and garnish with lemon peel (1), 2 peach (1/4) slices and rosemary (1 sprig).
