step 1
Cook the pasta (350 g) according to pack instructions. Drain well, reserving a splash of cooking water and set aside to cool while you assemble the rest of the dish.

While the pasta cooks, combine the diced pineapples (200 g) with the chilli flake (1 pinch), sugar (1 tsp), lime (1) juice and vinegar (1 tbsp). Set aside to lightly pickle.

Toss the cooked pasta with the mozzarella (1) and Parma ham (80 g). Stir the tomato paste (2 tbsp) into 2 tbsp of reserved pasta water, olive oil (2 tbsp) and garlic (1 clove). Stir the dressing into the pasta. Finally, drain the pineapple and stir it into the pasta, topping with the basil (as needed) to serve.
