Preheat the oven to 160°c fan.

Score the pork belly (1) with a sharp knife and drizzle with olive oil. Place the pork belly in a large roasting tin and cook according to pack instructions. Cook for the required time detailed on packaging (this will vary from weight to weight).

While the pork is cooking, peel and chop the potatoes (800 g) and parsnips (4) into bite-sized pieces. Cut any larger baby carrots (200 g) in half lengthways.

When the pork has 1 hour left, turn up the oven to 180°c and add the veg to the roasting tin (excluding the greens) and thyme (4 sprigs). Add the potato seasoning (1 1/2 tbsp) and 1 tbsp olive oil and toss to coat. Return to the oven. Shake the veg half-way through.

After an hour, remove the pork from the tray and allow to rest. Return the veg to the oven and cook for a further 10 minutes. Stir in the cabbage greens (100 g) and cook for 5 minutes, until softened.

Slice the pork and serve with the roast vegetables, gravy (to taste) and apple sauce (to taste) or mustard.
