Butterfly the chicken (570 g) and place in a baking tray with the olive oil (2 tbsp), garlic (2 cloves), lemon juice (1), rosemary (1 handful), salt and pepper. Cover and leave in the fridge to marinate for at least 1 hour.

Cook the chicken on a barbecue or in a griddle pan until lightly charred and cooked through. Set aside.

Cut the lettuces (6) in half lengthways (keeping the cores intact) and brush with olive oil. Place on the barbecue or griddle pan and cook on both sides until lightly charred.

Arrange the lettuce on a serving platter and top with the chicken, avocado (1), anchovies (70 g) and crouton (1 pack). Pour over the dressing (2 tbsp) and serve.
