Heat the butter (1 knob) in a large frying pan over a medium-low heat with a splash of oil. Add the onion (600 g) and a sprinkling of sea salt. Sauté for 20-30 minutes, stirring now and again, until jammy and caramelised. Add a splash of water if they’re browning too quickly. Stir in the cheddar (100 g) and marmite (2 tsp).

Meanwhile, cook the pasta (400 g) in a pan of salted boiling water according to the pack instructions, until al dente.

Using a spider or slotted spoon, drain the pasta into the cheesy onions, adding half a cup of the pasta cooking water too. Toss until the pasta is glossy. Serve with black pepper, more cheese and top and parsley (as needed), if you like.
