Preheat the oven to 180°C fan.

Add the sourdough (80 g) to a lined oven tray and drizzle over the olive oil (1 tbsp). Add the rosemary (1 sprig), season with salt and pepper and mix to coat. Bake for 10-12 minutes or until golden and toasted.

While the croutons are cooking, add the balsamic vinegar (1 tbsp), mustard (1 tsp) and olive oil (3 tbsp) to a bowl and whisk until emulsified. Add the cherries (100 g), mix well and leave them to marinate for a few minutes.

Add the salad leaves (100 g) to bowls and top with Parma ham (60 g). Thickly slice the cheese roulade (80 g) and then tear each slice into small bits and add to the salad bowls. Finally add the croutons, spoon over the cherries and add the dressing.
